The snail farming sector in Italy: state of the art, health issues and wildlife risks.

RIASSUNTO
L’allevamento delle chiocciole per scopi alimentari è una realtà commerciale ormai ben affermata grazie alle ottime qualità nutritive e alla relativamente facile modalità di allevamento di questi animali. Tuttavia non bisogna trascurare gli aspetti sanitari, faunistici e tassonomici che questo tipo di allevamento comporta e in questo lavoro evidenziati. Lo scopo di questo contributo è quello di aiutare a migliorare i controlli sanitari nell’allevamento di questi animali destinati alla nutrizione umana, ed evidenziare quelli prettamente faunistici, nel rispetto dell’ambiente, al fine di evitare l’introduzione di nuove specie alloctone, nonché l’inquinamento genetico di quelle autoctone.
ABSTRACT
Snail farming for food purposes is a well-established commercial reality thanks to the excellent nutritional qualities and the relatively easy way of breeding these animals. However, the health, faunal and taxonomic aspects that this type of farming involves and highlighted in this work must not be overlooked. The aim of this paper is to help improve health controls in the breeding of these animals intended for human nutrition, and to highlight the purely faunal ones, respecting the environment, in order to avoid the introduction of new alien species, as well as the genetic pollution of native ones.
