RIASSUNTO
Le rane sono da innumerevoli anni utilizzate come cibo dall’uomo per la loro facilità di cattura, spesso per la loro abbondanza, e per le loro qualità nutritive. Tuttavia il prelievo in natura ha comportato gravi danni a tutto l’ecosistema, spesso compromettendo popolazioni di specie rare e a grave rischio di estinzione. Anche gli aspetti sanitari che questi animali comportano sono di una certa rilevanza. Lo scopo di questo lavoro è quello di analizzare le problematiche legate all’allevamento e al consumo alimentare di questi animali in Italia e nel mondo.
ABSTRACT
Frogs have been used as food by humans for countless years due to their ease of capture, often their abundance, and their nutritional qualities. However, wild collection has caused serious damage to the entire ecosystem, often compromising populations of rare and seriously endangered species. The health aspects that these animals entail are also of some importance. The aim of this work is to analyze the problems related to the breeding and food consumption of these animals in Italy and around the world.
